  1. Thank you so much! I don’t buy or cook frozen veggies. They taste funny. However, recently I used frozen corn to make Mexican street corn & my family is obsessed with eating it – delicious! So I bought frozen broccoli & frozen spinach to try other recipes. Still working on a great way to prepare the spinach but this broccoli bake might just do it! Excited to try it, it looks delicious!

  2. I've been doing this but I've always just tossed the veggies lightly in oil, helps to get a slightly more even browning. Even with the just oiling the pan trick it's still not the same as fresh, consistency wise so I just take them pretty far in the convection oven at a lower heat. They will be a bit more shriveled up but that's perfect to put them in a sauce IMO.

  3. I've been roasting my frozen veggies in the air fryer (tiny convestion oven) for a while. I lightly spray the veg with oil, season, then shake the basket and do it again. Halfway through I'll shake the veg for even browning. A bag of broccoli only takes 7 minutes at 400⁰ in my knock-off air fryer.
