Thanks for the recipe. I followed the measurements but my dough became to wet to even handle. I'm from uk and use natural cottage cheese. Can anyone suggest why this is and ant suggestions. This happened twice. The bread turns out good

Just made this bread today. Baked by the recipe, just added a tablespoon of sugar. The bread turned out amazing, nice crust, soft and fully baked inside. Will bake again definitely. Thanks to Carolina ❤

I assume the yeast mixture was added to the egg white cottage cheese mixture before adding the flour but you didn’t show tat

I really wanted to like this but the dough was just too sticky. I’m somewhat experienced with high hydration bread but this was just too much. I’ll experiment with different ratios and see if I can tweak to something more workable. At a minimum I’d highly recommend a stand mixer, but even shaping was a bear.
“Free recipe” link takes me to a NYT subscription page. So, not free. Am I doing something wrong ???

I mixed the ingredients, let it rest, and did a stretch and fold method several times.
Then I continued according to the instructions. The bread is soft and delicious, cut into firm slices🍞
Wonder if I can use Einkorn or Almond flour.
I think I'd rather do this dough with a no-knead stretch and fold method to be honest. Even if kneading no need to add flour to the work surface, slap and fold will do fine and won't alter your hydration.
So just normal white bread with a bit of cottage cheese.
