Speaking of beef prices- I was looking at briskets yesterday. $135 was the cost of the smallest one I could find. They were half of that a year or so ago. Hard pass! Chicken looks amazing btw!
10 pound bags of quarters went on sale at my grocery store for .75 a lb two weeks ago. I cleaned them out so fast. Been eating them ever since in all kinds of dishes.

Thanks for the video. The legs look amazing. You got them for a pretty good price. I would say 3 years ago once in a while I'd see them on sale here for 39-59 cents a pound. Now 79-99 cents is a good sale.
I am not from Texas. So I will say right now, BBQ chicken (sauced) is better than brisket. Easily.

I love those 10# bags of CLQs. I'm a trucker, so unfortunately I don't have my drum smoker with me, but I'll sous vide them. The bags go for between $5 and $8 in most areas across the country. You can't beat that value!

Isn't the skin rubbery at 250f? Even smoking at 350f mines can get rubbery.
I have a vertical pit boss smoker, can I use those pecan pellets?
I'm guessing you weren't going for crispy skin with your temp set to 250, correct?
Those pecan pellets are the truth. The amount of smoke, flavor, and how long they last in a cook is amazing. I always use the super smoke function on my grill and they still last forever. If you haven't tried them yet, I strongly encourage you to do so. I'm waiting on two boxes right now. Remember the first ingredient of your cook is the pellets or wood. Thanks for introducing me to an awesome product.
