Stop saying “bird”
Oh wow, I am so over cooking my chicken
My Italian mom did this procedure in the 1960s, when she would also place a brick on top of the split chicken, great crisy skin.
This would have been a great opportunity to mention how important it is to calibrate the thermometer, and correct for elevation (default is sea level).
Any suggestions on how to get the same result on a counter small oven? Thank you

Her voice sounds like silk… Reminds me of the 1 800 TALK NOW numbers in 80's.
I'm not a person who likes overcooked meat by any means, but 160 is a little low for me. I've found if I cook it to 180 it still comes out tender and juicy without feeling undercooked or dried out.
