Every smoked brisket the next night I make French Dips with left over brisket, grilled onions and cheese. It’s pretty similar. It is one of our favorite meals.

Matt, I'm not a cheese guy, but, when I see Philly chefs make a cheese steak, they melt the cheese on top of the meat while on the grill and then the cheese goes bun side down. Don't know if it would change anything, but just wanted to drop a tip. Love your videos

Unfortunately Matt left out a key ingredient… He should have grilled some pablano (or spicier) pepper slices at the same time he was cooking the onions.
I'm gonna try this with a Chuck Roast cooked like a brisket.
