My main curiosity is butter basted vs butter melted on top. Especially a compound butter or one that was melted in the pan with the steak juices instead of basted. With how little the surface actually absorbs it can't possibly be any better than just pouring the hot melted garlic-herb infused stuff

I've switched to grilling lately i''ve been cooking ribeye cap steaks with lots of chopped garlic. gets a great char on the garlic whereas this method would burn it like that
If you’re using a probe to check steaks then you shouldn’t be cooking them.

That’s a tough one. I love both. But the cast iron is clutch when it’s cold out and the grill won’t get hot enough.

Depends on what I'm in the mood for. Nice smokey flavor of wood fire grill is very nice…but butter basted crust is great as well.

I prefer the pan, cast iron or not. I prefer crust to grill lines. More importantly, all juices stay in the pan, rather than drain away.
