Maybe the Family originated in the province of Ilcos. Almost all dishes in that province put ginger in all their dishes.
Every filipino family has their own version of cooking Sinigang.

I wonder where she grew up? I’ve never heard of a sinigang made like this. Authentic to her but i wonder to who and where else. I bet it tastes really good though!!

I make a similar salad every summer. Makes a lovely dinner when my mint and cilantro and basil are fresh in the garden. What's nice is you can use a bunch of different lettuces, cabbage and other vegetables so you really can have it most any time. I always have chicken breast in the freezer.
That guy has some serious knife skills. It would take me at least 20 minutes to cut that ginger. That counts the minutes spent applying band aids to various fingers.
I may have to make that salad it looks scrumptious!
