Adding hickory wood chunks for smoke at 300F. • Remove protein from marinade, pat dry then season. • Place protein on cold side of the grill and close the lid. When protein reaches an internal temperature of around 125F place over coals to get a nice sear. Keep flipping until internal temperature reaches 135F. • When done remove and let rest for 20min before slicing.
