165 is dried out. I take it 155 and it’s fully cooked and juicy. Just the breast.
Cooking food to safety is a relation between temperature AND time. If you chicken stays at 155 for a few mins, it is safe to eat. The 165 is because it only has to stay at that temp for a second.
Cook your thighs to 200 slow and low skin side down. Preferably dried brine the night before.
I prefer clear juices though – the pink grosses me out

Or you could save a sentient life and eat a mushroom (“chicken of the woods,” anyone?) instead, and never have to worry about cooking it at the right temp or length, ever again.

An instant read thermometer is THE best tool for cooking meat. And you don't need to cook to 165°. It's a function of both temperature AND time 😊
