Ingredients
1 pound uncooked lobster meat (claws, tails, whichever you prefer or both)
Β½ cup unsalted butter
1 garlic clove, minced
ΒΌ cup chopped fresh chives
3 tablespoons chopped fresh dill
2 tablespoons parsley
2 tablespoons chopped fresh celery
Β½ teaspoon smoked paprika
Β½ lemon, juiced
lemon wedges, for spritzing
kosher salt and pepper

Instructions
Heat 2 tablespoons of butter in a large skillet over medium-low heat. If the lobster meat is in large pieces, chop it slightly (though I prefer leaving it in chunks!). Add the lobster meat and minced garlic to the skillet. Cook, stirring occasionally, until the lobster turns bright pink, becomes opaque, and cooks through.

While the lobster is cooking, melt the remaining butter in a saucepan over low heat. I prefer to brush the brioche buns with butter and warm them in the oven for a few minutes.

In a large bowl, mix together the cooked lobster, a pinch of coarse salt, pepper, all of the melted butter, chives, and fresh dill. Squeeze in juice from half a lemon and toss everything together. Taste and adjust seasoning with more salt and pepper if necessary.

Divide the buttery lobster mixture among 4 to 6 brioche buns. Serve with lemon wedges for squeezing and potato chips on the side!
