PRO TIP; let your roast get started for the first third of the cook then insert your temperature probe slowly and watching the reading drop as you insert it once that probe rebounds and starts going up you've located the coldest center of your cook and the resting place for your probe. Pull the probe back accordingly. Cold center is often not as deep as you might think.

I have been Spatchcocking about 10 or so yrs now. Don't think I will ever go back to whole bird. Results have been outstanding and in about half the time… Give or take depending on techniques etc as well. Fried vs smoked vs grilled vs baked. They all slam it !! Seriously try it out.

2 problems here.
1) back bone is on the opposite side to the breast.
2) my fried turkey is 10x juicier than this.

All good until he cut the breast wrong. Take it off hole and slice it the other way
First you have to brine it. Also. Remove the whole breast when carving and cut horizontally across it. That will help make even a dry turkey edible and a moist turkey melt in your mouth.
Nobody, and I mean nobody wants a spatchcock turkey!! The bird has a cavity for a reason!!!
