What and how is he cooking on the butcher block table?
Did you find that the Beef flavor got washed out a bit by the Tallow from being Sous Vide held? Guga has a channel called Sous Vide Everything and he has seen this with any Beef and any fat added to it for a Sous Vide cook. It just washes out the beef flavor of the meat.
What is the item that Bradley uses at 6:35. It looks like a portable electric burner of some sorts. He uses it on top of his cutting board and I don’t see any wires connected to it.

Why not just cook it the traditional way.
It's such a fantastic stew and sometimes ya just don't fuck with tried and tested things.

What temp did you set the Sous Vide to?
When you cooked that bacon… what's the setup for the heat? I didn't see any hot plate/electric burner set up
