America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Use some wondra mixed in with your regular flour in cookie recipes for more loft and softer cookies. Similar to corn starch but better.
Every time i use this or cornstarch in a multi-cooker/electric pressure cooker it is unable to come to pressure due to the the gelatinization. But Jacques Pepin made curry with it once in a multi-cooker. I wonder what I'm doing wrong?
I use instant mashed potato flakes to add substance to a sauce without using roux.
So in hot or cold liquids to make gravy?
