Easy Oatmeal Bread Recipe | How to Make Oatmeal Bread

Ingredients:
1 cup (90g) Rolled oats
3 cups (375g) All-purpose/Bread flour
1/4 cup (80g) Maple syrup
1 1/3 cups (320ml) Boiling water
1ΒΌ teaspoons Instant dry yeast
1Β½ teaspoons Salt
2 tablespoons (30g) Melted butter

Directions:
1. In a large mixing bowl, or in the bowl of an electric mixer combine boiling water, oats, maple syrup, butter and salt. Mix and let cool slightly.
2. Add flour, yeast and stir until dough forms. Knead the dough for 7-8 minutes.
3. Place the dough in a lightly greased bowl, cover and let rise 1 hour, until doubled.
4. Gently deflate the dough, shape it into a log. Place the log in a lightly greased 9 x 5-inch loaf pan. Cover the pan, let rise for about 1 hour or it’s crowned about 1-inch over the rim of the pan.
5. Preheat oven to 350Β°F (175Β°C).
6. Brush with water and sprinkle some rolled oats on top of the loaf. Bake for 40-45 minutes. If the bread appears to be browning too quickly, cover with aluminum foil for the rest of baking.
7. Let cool completely before cutting.

  1. Yeah, tried 350f for 45 minutes TWICE, and the middle was not done both times. Much better results the 3rd time I did it at 375f, and even then I have to put in in convection mode afterwords for 10 mins to give the crust some colour.

  2. Why list maple syrup? How about granulated sugar? Much less expensive. One quarter of a cup of maple syrup? That's about 4 tablespoons. Ordinarily, for bread, I use 2 tablespoons of sugar for about 3 cups of flour. Your recipe uses 3 cups of bread flour and one cup of oats. I use a bread machine and would scale back the recipe to two cups of flour and 2/3 cup of oats. Your rising time is altogether 2 hours. I would try the rapid cycle and moderate heat on my bread machine, otherwise it would take 4 hours for the whole grain cycle. I don't use 4 tablespoons of sugar for bread. That's a lot of sugar. I may have to play with the recipe. I'll judge by the appearance of the dough after mixing.
