do people use different spoon for each scoop for the different powder? or just accept that some salt will get into baking powder or something like that?

I made this with some chicken quarters and “baked/oven fried” them on a charcoal grill for the Super Bowl. Turned out great

Baking powder actually prevents browning. Several of the Maillard reactions are optimized under lower pH, and baking soda raises pH.
Use fine salt, using kosher salt here makes no sense.
