Ingredients:
2.5 lbs Shrimp
1lb smoked sausage
2.5 lbs of russet potatoes
3 stalks celery
1 large yellow onion
1 large green bell pepper
1 cup All purpose flour
1 cup veg Oil
2 tsp minced garlic
Cajun seasonings
Garlic powder
Parsley
Salt & pepper
6 cups water
Shrimp stock:
Peel shrimp and simmer the shrimp peelings in 6 cups of water and add dry seasonings. Cajun, garlic powder, parsley salt & pepper for 1 hour. Strain the peelings and keep the liquid once it’s done simmering
Roux:
In a pot (stew pot) on medium heat add 1 cup veg oil, then add 1 cup all purpose flour. Turn heat to low and mix continuously until roux is no longer grainy and liquified to a medium to dark brown color.
Add cut up vegetables- onion, celery, bell pepper and sauté in roux until veggies are half way softened.
Then add shrimp stock and mix to make sure there’s no clumps
Add peeled/cubed potatoes and cook on low/medium heat for approximately 20 mins or until potatoes are fork tender
Add minced garlic & shrimp.
Then add more dry seasoning if needed & salt & pepper to taste.
Cook on medium heat for 2 minutes to allow the shrimp to cook.
Serve over rice and enjoy!

Shrimp Stew is definitely Creole, NOT CAJUN. Making it for years before those French from Nova Scotia arrived bringing oil and flour, their only contribution to Creole Cuisine.

Never have I made shrimp stew. Made sh creole. Sh étouffée. But I did know to put in sausage it potatoes in sh stew. Looks delish. Crowd pleaser. And feeds a lot. Shrimp cheaper than crawfish!! And I like shrimp better.

Roux 101: mix oil and flour in a cast iron skillet. Bake @ 350* and stir at 10 minute intervals, until desired color. This allows you to prep the rest.
