I have a question, what can I substitute for buttermilk?

Why was there bacon on the chopping board? Recipe is not free w/o trial membership:
2# red potatoes , rinsed n sliced lengthwise
3Tb olive oil
1Tb salt
1/2 tsp dried thyme
1/4 tsp pepper
3 cloves garlic smashed
Mix all in slow cooker
Low 5-6hrs or
High 3-4 hrs
Test to doneness, set to warm
Add 2/3 C buttermilk
1/4 C sour cream
Smash to chunks
Add 2Tb chives
Do you need to pick out the potato skin when eating?

Why not just lift up the cutting board and use the bench scraper to push the potatoes directly into the slow cooker??
I have noticed in these videos Julia uses table salt rather than kosher salt. Why do we think that is?

Made these today but the potatoes did not cook evenly. Had to add a couple more hours and chop up the ones that were not cooking. In the end, they did taste great but next time I'm going to try to keep a single layer of potatoes so that they are all touching the hot part of the crock pot.

Unfortunately it did not work for me. The potatoes were very tough, kind of leathery on top and I could not soften them even in the microwave afterwards. Perhaps I should have added more liquid.
Can you please have an episode on how to make German potato my grandma used to make it it's served warm it has vinegar in it and bacon and has bacon grease please!!!❤️
