Marinade the rotisserie roast beef to get the juiciest result using the Emeril Lagasse AirFryer Pro. The beef is very lean but can very tough so it is recommended to marinate it at least 1 hour before air frying. Cooking at 375°F for 45 minutes. Follow the doneness guide to cook your beef to your desired temperature.

Rotisserie Roast Beef Recipe
Serves 4

Ingredients:
2 sprigs thyme, chopped
3 cloves garlic, chopped
½ tbsp. salt
1 tbsp. onion powder
1 tsp. ground fennel
½ tsp. ground black pepper
2 tbsp. olive oil
1 2-lb. eye round

Directions:
1. Mix the thyme, garlic, salt, onion powder, ground fennel, ground black pepper,
and olive oil together in a bowl to make the herb mixture.

2. Rub the roast with the herb mixture and refrigerate for 1 hr.

3. Place the Rotisserie Shaft through the center of the roast. Secure the Shaft
with the Forks.

4. Place the Shaft into the AirFryer Pro. Press the Power Button and then the
Rotisserie Button (375° F/191° C) and increase the cooking time to 45 mins.
to begin the cooking cycle.

5. Cook the roast to the desired doneness (use a meat thermometer to measure
the internal temperature):
Doneness Temperatures:
• Rare: 130° F/54° C
• Medium Rare: 135° F/57° C
• Medium: 140° F/60° C
• Well done: 160° F/71° C

6. Let the roast rest for 10 mins. before slicing.
