  1. I'd add a utility/petty knife in the mix. Most of my cutting now relies on these smaller and equally versitle knives, more so than my chef knives. They're the perfect in between, solidly in the middle of a pairing and chef's knife.

    So glad you're recommending the Victorinox paring knife! I already had their chef's knife, so when I saw the paring knife in "Little Switzerland" I had to buy one, and wow I'm so glad I did – it's every bit as good as you say!

  3. The Victorinox Chef knife is my favorite knife. It stays sharp for an extremely long time, given the price. I'll definitely look into the paring knife.The Mercer bread knife is new on my radar.

  4. As of 9/30/26, the Mercer BPX 8" Chef Knife is available on Amazon for less than $28. The BPX line has better steel that's harder and will hold an edge longer than the Millennia. (x50CrMoV15 @ 58 HRc) The handle shape is the same as the millennia but has a texture similar to the Victorinox Fibrox Pro. The bread knife is also available in the Mercer BPX line, though it's a bit more expensive at around $38. Still cheaper than Victorinox.

  5. I was just thinking 🤔 of getting two knives and I was like I wonder what those gals at AmericasTestKitchen have to say and then bam, you video showed up on my notification 😂

    But the next review, you ladies have to do is the best knives sharpen. I been browsing on Amazon but can find a good one. Help!
