Recipe
∙ Beef marrow bones of about 3kg
∙ Salt & Pepper
∙ Fine coriander (about 1½ tablespoons)

The sauce
∙ 2 tablespoons flour
∙ 2½ tablespoons butter
∙ salt & white pepper
∙ ½ teaspoon dried oregano
∙ ½ teaspoon dried thyme
∙ 5 garlic cloves
∙ 1½ cups fresh milk
∙ 250grams Escargot(snails) drained
