Oh it's so nice that the young woman cooking can make "a really nice nod" to what this dish is.
It's always good to have Toni on the show (the adult in the room).
The problem is I watch these videos and I now crave the dish. Kinda like getting a song stuck in your head. Only now I have to make this instead of just hearing the song!

I was a bit surprised you didn't lightly roast the rice before cooking with it for more nutty flavor. But perhaps that would have washed off when rinsing.
