To me Kampot pepper is way spicier and pungent

Is sugar absolutely necessary in this (and most Asian) recipes? This looks incredibly delicious by the way, don't get me wrong. I'm just concerned that daily consumption of sugar-laden cooking might not be the healthiest or ust sustaiable diet. THANKS! – Asian Guy
