16-20 Pound Brisket
Trim to preference
Binder of choice (I did mustard)
Seasoning of choice
Inject flat with beef tallow of choice
Smoke at 275f for 8-10 hrs
Wrap in foil and place back on smoker
Take off the smoker once internal is 200-202f
Or until probe slides through like butter ๐ง
Slice up
