Worchestire for the binder and seasoned with @meatchurch Holy Cow, they hot the @biggreenegg indirect, 250 degrees for about 4 hours. Pulled off when they were probe tender, around 208-210 internal.

Those looked like shit raw but they came out great
The only way to get the good meaty ribs is to buy the whole rib roast. You can cut steaks in the thickness you prefer & then smoke the rib section you cut out from the steaks. Mesquite is my favorite wood to use when smoking beef (ribs & brisket). Mesquite is also best when used on chicken.
I saw them at Costco too but I thought they would get dry because they didn’t have much meat nice to know they turn out ok
