The taste of lengua cannot be beat as far as tacos or burritos go. I love it SO MUCH!
The part that troubles me (and sometimes prevents me from enjoying it) is the texture.. it's the feeling of tastebud inside my taco which are rubbing against the tastebuds on my tongue (like I'm making out with my taco???) that are so hard to get past no matter how delicious the flavor is!
I love the fact that you skinned that off of the lengua. It probably makes it so much easier to eat.
